The purpose of the Health and Kinesiology Internships is to advance and enhance students' community engagement and professional growth through integration of classroom theory with planned, supervised, practical, and meaningful work experience in the field of community health education. In this Community Engaged Learning (CEL) designated course, students will gain a deeper understanding of the real challenges and rewards of working in a community setting. Each student will work with a community partner to create and accomplish individual goals that will address their organization’s needs. As they actively engage in the community, students will gain a deeper understanding about how to integrate key concepts from the Health and Kinesiology curriculum in a real-world setting.

I support the placement of all of our sports nutrition master’s students in their capstone/advanced practice placements.

Our program places second-year master’s students interested in the field of sports nutrition and dietetics in various community placements where students work one-on-one with a sports dietitian to provide nutrition education and support to athletes of various levels and backgrounds. Our community partners include but are not limited to the University of Utah Athletics Department, the Utah Jazz NBA team, Intermountain Health’s Sports Nutrition Department, US Ski & Snowboard, the US Olympic and Paralympic Committee, Salt Lake Community College (SLCC), and the Student Life Center here at the U of U. I also supervise students completing a capstone/advanced practice placement focused on teaching in higher education where 1 to 2 students each year are paired with a SLCC mentor and teach their own nutrition class at SLCC in their second year of the program.

Complementing our methodological considerations of community engagement perspectives, processes, and outcomes, students will conduct semester-length research projects to critically interrogate local intersections of place- and race-based efforts for environmental justice.
