The University of Utah Metabolic Kitchen, established in 2023, is a premier collaborative resource between the University of Utah College of Health and the Utah Clinical and Translational Science Institute (CTSI) Clinical Research Unit (CRU). Conveniently located in the HPER E building on the University of Utah campus (260 S 1850 E, Salt Lake City, UT 84112), our mission is to fuel research excellence and advance scientific discovery through precision nutrition solutions.

The 770 ft² professional kitchen is outfitted with industrial-grade cooking appliances and cutting-edge dietary analysis software.

Comprehensive Services

  • Study Consultations: Led by a registered dietitian, addressing nutrition science, research protocols, interventions, and epidemiological tools
  • Nutritional Assessment: Estimating participants' energy and nutritional needs
  • Custom Menu Creation: Develop tailored menus and recipes to meet specific research requirements.
  • Precision Meal Preparation: Preparing meals to exact standards based on study protocols
  • Diet Assessments and Analyses: Meals prepared to exacting standards according to study criteria
  • Diet Analysis: Conducted by a registered dietitian using research-grade software to analyze dietary intake from food images, 24-hour recalls, and 3-day food records

CURRENT RESEARCH

The University of Utah Metabolic Kitchen plays a crucial role in supporting a diverse range of research studies through its advanced facilities and expertise. By providing customized control diets and specialty nutrition interventions, the facility tailors its services to meet individual participant needs and study requirements, including estimated energy needs, culturally specific meals, dietary restrictions, and other nutritional parameters. To date, these services have been integral to studies conducted by researchers at the University of Utah Clinical & Translational Science Institute, Huntsman Cancer Institute, Veterans Support Center, and College of Health, exploring pivotal aspects of nutrition, metabolism, and overall health.

Current initiatives supported by the Metabolic Kitchen encompass studies on the impact of healthy diets for bladder cancer patients and Pacific Islander breast cancer patients, the effects of a low FODMAP diet on inflammatory bowel disease in veterans, and investigations into sleep and bedrest.

STUDENT OPPORTUNITIES
